Mayo, the new craze.

Ok, here we go, my first blog, ever. Please be kind and let me know your thoughts.

My name is Clive, owner of Redding BBQ Catering. Over time I will be telling you about our various catering experiences and throwing in a few BBQ tips and recipes for you to try at home.

Let’s talk chicken. You know, that pinkish colored white meat that comes in plastic wrapped trays where they hide all the inedible stuff underneath.

It doesn’t matter what you buy, breasts, thighs, drums or wings, it’s chicken. Here’s the latest and trendiest way to cook it.

What you will need

6” bowl.

Spoon.

Plastic wrap.

¼ measuring cup.

Paper towel.

Chicken.

¼ cup Mayo.

½ tsp salt.

1 tsp black pepper.

A jar of your favorite BBQ rub.

Method

In the bowl mix the Mayo, salt and pepper.

Pat the chicken dry with paper towels.

Place the chicken in the bowl and make sure it gets covered in the Mayo mixture.

Cover the bowl with the plastic wrap and refrigerate for at least 2 hours.

Remove chicken from bowl and sprinkle with the rub. Now you are ready to grill.

I usually cook chicken pieces at 350* until the juices run clear or if thighs to around 180*.

I found it to be really juicy and with a great texture on the outside.
